In Colombia, Arabica coffee is grown almost exclusively by hand, allowing for careful selection of the ripest cherries. While this process is more demanding, it ensures that only exceptionally high-quality beans are harvested, eliminating green or overripe cherries that can alter the coffee's flavor.
The exceptional geographical and climatic conditions of the Andes mountain range in Colombia, with an altitude of between 1,200 and 1,800 meters (for comparison, Paris is only 35 meters above sea level), provide an ideal environment for growing coffee.
At this altitude, coffee grows slowly, allowing for the development of dense, flavorful beans. This prolonged growth promotes a unique aromatic complexity, where each bean reveals harmonious notes typical of Colombian coffee. Furthermore, the region's tropical climate, combined with its fertile volcanic soils, creates optimal conditions for growing coffee trees, ensuring exceptional quality in every harvest.
